Corn
I ran across this article, and I thought it was too good not to comment about it..., or at least to talk about corn a little bit.
First of all, corn is from the Americas and for some reason than makes me proud. The Incas, the Aztecs and other Native American civilizations mastered the growing and consumption of the plant.
The article states a little known fact about the corn. It pretty much says we shouldn’t buy it in supermarkets because its sugar content diminishes as it spends time away from the crop.
Alice Waters writes in one of her books a recipe that includes corn… she says something like, put salted water to boil and go to your corn field to pick one up. Rush back to the boiling water and drop it in.
I like my corn sweet, but I don’t think I’ve ever eaten it that fresh. I wonder what it would be like.
